The mastery behind Ficelle's pastries is largely attributed to the legendary Chef Pâtissier Eric Lenoir. With a career spanning back to 1968, Chef Lenoir brings decades of experience and a global perspective to Ficelle. After honing his craft in France for 30 years, his culinary journey took him through Quito, Montréal, Las Vegas, and Los Angeles before he found his way to Mexico over 15 years ago. It was in May 2016 that he partnered with Julien de Bellaigue and Chloé Barilone to establish Ficelle, a venture born from a shared passion for authentic French baking.
